GINGER COOKIES

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 8 tablespoons  butter, at room temperature
  • 1/2 cup packed brown sugar
  • 1 large egg

Directions

Sift the flour, baking soda, cinnamon, ginger and salt through a wire sieve into a medium bowl. Set aside. In a large bowl, using a hand-held electric mixer or wooden spoon beat the butter until well-combined.  Add the brown sugar mix until the mixture is light in texture and color. Put egg in to the mass. Using a wooden spoon, gradually mix in the flour mixture to make a stiff dough. Divide the dough into two thick disks and wrap each disk in plastic wrap. Refrigerate until chilled 1 hour. Using  cute cookie cutters, cut out the cookies and transfer to nonstick cookie sheets. Bake in the own for 5 minutes.

ICING

Ingredients

  • 2 cups icing sugar
  • 1 teaspoon vanilla extract
  • 1 egg white
  • 4 teaspoons water

In a medium bowl, using a hand-held electric mixer at low speed, beat the icing sugar, vanilla extract, egg-white  and water until combined.
