It was my first time baking a crepe cake. We found out about this cake in Thailand. My husband really likes that kind of cakes. So I thought I will try to make one on my own for his birthday. It took quite a bit of time to bake this cake but it was well worth it. I didn’t take picture of inside because it was cut in the middle of the party. But I will show an example how it looks like.   • 8 eggs
  • 6 tablespoons sugar
  • 4 tablespoons vegetable oil
  • 110g unsalted butter
  • 1l milk
  • 500g flour
  • green food coloring
  • 750g mascarpone cheese
  • 100g sugar
  • 2 teaspoon vanilla extract

  • chocolate
Make the crepes: Add eggs, sugar, vegetable oil, butter, milk, flour, and food coloring in a bowl and lightly beat with a mixture until smooth.  Brush the frying pan with a little bit of oil and over medium heat cook 3 or 4 tablespoons of the batter at a time. Spread the batter thinly and evenly. When the top is dry, flip it over and cook for another 10 seconds. Cook the crepe until the surface is fully cooked.
Make the cream filling: Whip the mascarpone cheese, adding in sugar and vanilla.
Build the crepe and fill with mascarpone cheese between the layers. Chill in the refrigerator for at least 2 hours. I will advise serving with jam or syrup because it’s not sweet enough.
